Everyone Should Know How to Make a Gin Fizz

Posted: 05 Jun 2021 04:00 AM PDT

Classic Gin Fizz

The gin fizz is one of the better-known variations of a broader cocktail category, the fizz. The term largely indicates a sour drink, or one that incorporates lemon or lime juice for citric acid, and is then topped with carbonated water.

Many fizzes also incorporate egg whites. While not a requirement, the enduring popularity of the Ramos Gin Fizz, a drink famous for its use of cream, eggs and a 12-minute shake time, as well as eggs' use in numerous pre-Prohibition recipes have led many to equate them as a signature ingredient of fizzes.

Though it can be prepared a number of ways—some argue a conventional gin fizz uses no egg should be served up, without ice—we've opted for a version that combines the best of modern and traditional technique. You can omit the egg white to save on ingredients and mess, or to create a vegan cocktail, but its inclusion provides needed body and texture to the drink that helps differentiate it from similar cocktails like a Tom Collins.

We also opt to serve our gin fizz over ice rather than up, as the carbonated drink begs to be enjoyed as warm-weather refreshment. Serving without ice invites your cocktail to quickly transition to the temperature and texture of flat beer if you don't sip fast enough and offers no real benefit to the drink.

Reducing Oxidation while Bottling

Posted: 05 Jun 2021 04:45 AM PDT

Anyone have any good tips, methods or equipment for reducing oxidation from bottling process.

I currently use the PET bottles and have been using the carb drops coz I had some left over still. I then squeeze the air our of the headspace and put in the fermenter fridge with the inkbird probe on the side of one bottle to carb up at around 19-20c.

I currently bottle straight from primary after cold crashing for a few days using one of those bottle wands with the blue tip. This issue I have is...

No chill bladder (cube alternative)

Posted: 05 Jun 2021 02:33 AM PDT

Has anyone got much experience with these?

I used them for the first time for a double batch and they worked well. I often knockout 15L increments on my large system then dilute when I pitch. They are probably not suitable for that as it's a bit hard to weigh as you fill.

has anyone rigged something up to make it easy to fill them? I sat them in a Cooper's fermenter...

Pluto gun fittings

Posted: 05 Jun 2021 02:01 AM PDT

I have acquired a second hand Pluto gun and am new to kegging. I have set up my kegs and lines (4 kegs). I'm not sure if I have all the parts for the gun? Does this look right?

Also, if I want to do a force carbination, do I just disconnect the other kegs, turn up the regulator, do my stuff, turn it down and reconnect?

Sorry for the stupid questions, but I don't really want stuff anything up.

Blonde Ale

Posted: 05 Jun 2021 01:41 AM PDT

Looking at doing a 11l blonde ale. 1.042 OG 15ibu. It will be 98% pale ale malt and 2% light crystal. Wanting to add Raspberries at about day 3 or 4 to primary fermenter. Would 1kg be okay or should I add more. It will be fermented at 20 degrees using Kolsch dry yeast. Not sure whether to pressure or normal ferment. Would it be better to secondary ferment.

Ginger beer using beer as a base ?

Posted: 04 Jun 2021 06:32 PM PDT

I brewed a pale ale a few months back and i used the spent grain for a parti-gyle, so i have 20ltrs of wort that is like a very light beer with an SG of about 1.018.
Thinking of using it as a base for ginger beer with maybe a small chilli infusion ?

Dry hopping techniques

Posted: 04 Jun 2021 04:19 PM PDT

I have tried various methods of dry hopping including during the time the yeast is working, after the yeast has finished etc. I recently came across an article written by Drew Beechum in Craft Beer and Brewing. He has changed the way he previously dry hopped. He suggests bringing the temperatures down to lager type temperature 3 to 4c after the yeast has finished working. Then dry hop for 2 days at those temperatures. He suggests by doing it this way it maximises the sought after fragrances...
