New Whiskey Maturation Methods Pave Way for More Inclusive Industry

A new wave of whiskey makers are using modern maturation technology to develop aromas, colors, and flavors in days rather than decades. Traditional technology requires aging in oak barrels but takes time, patience, and plenty of capital.

Modern methods, such as the “microstaves” used by Silicon Valley-based start-up Bespoken Spirits, could use up to 97% less wood than traditional methods and allow more entrepreneurs from different backgrounds to enter the spirits industry. Director of spirits information for the American Distilling Institute, Eric Zandona, believes the new methods may lead to a more diverse and inclusive industry.

“The process overall could potentially open the market for a new cohort of brands to enter into the space,” said Zandona.
