Like Doctor Frankenstein I am seeking to combine and reanimate the dead!

I've posted previously that I came into possession of an out of date Coopers Australian Lager kit and was pondering what to do with it. I found some information from someone who has tried brewing old kits and reported that they are still OK to use (in my case the can itself looked in good condition) but fermentation may take longer and have a higher finishing gravity. Dissolved C02 in Primary an its affects

Hi all,

It seems recently that my brews have had a ton of dissolved C02 in them, even after sitting for 3 weeks in primary. I have just put dry hops in my current 3 week old batch and the airlock has picked up to bubbling every 2 seconds. I noticed a lot of bubbles coming off as well when I stuck the hydrometer in there. Presumably the nucleation point on those solids causes the release of the dissolved gas. My main questions are these;

1. Is all this dissolved gas affecting my hydrometer...

Before America was discovered, about 20 years ago, we had bitter, stout, mild, brown ale, lager and foreign beer. You either drunk bitter or lager- I don't recall any of my age group drinking mild, and brown was Newkie, never Forest. I was and always have been a bitter man and yet this is now a minority style and, as far as I'm concerned, one of the hardest styles to get right. I also have this (probably false) memory of the perfect pint of bitter with a decent, tight head, light in colour...

I recently bought a Morgan's Master malt thinking it was a kit. I was advised by B2B that it wasn't a kit but something you add to a brew. So not ever used or added such a malt, to any brew I've made, do I use the whole tin with a kit, to make like a two tin brew, or just some of it, and do I add sugar in the normal way, or is the malt a substitute for sugar.

Hop additions

Would anyone be willing to give a list of the meanings of hop additions if there is any
60 min is for bittering
Flameout is for flavours aroma maybe
But what about 45 ,30, 15 min left in boil do they have a purpose

Jaipur IPA

I've enjoyed cask Jaipur IPA many times in pubs and seem to recall the canned/bottled version being alright. Drank a can of it last night (first in a while) and it wasn't anywhere near as nice as I was expecting. Anyone else got a view on this? Has it changed, was it always poor in cans, or was this perhaps just a duff batch?

Last years record has been smashed was Covid part of the reason, did you make more in 2020 than you would have had covid not happened?

Morning all -

I pitched this yesterday evening with fresh WLP800, so it's now had 16 hours on the stirplate at room temp with air bubbled into it.

Does it look OK and is it ready for me to add fresh wort (to take it from 1 to 3L) ?

Its appearance has changed and it smells nice and yeasty - but according to the refractometer the SG is the same and I was expecting to see a bit more of a head on it...

So I'm 4 kits in since mid February, currently been bottling and brewing on the same day to get some beer in the system.
Currently using a 30l bucket for primary in a fermentation fridge, then rack off and batch prime before bottling. Bottles then share the fermentation fridge for 14 days to carb and then cold storage in crates.
So I'm considering upgrading to a 35l snub nose with pressure set up.
Reasoning for the change.
1. Conical bottom to concentrate the trub.

I thought I might as well join the fun and post my own brewday log here in the forum. Today is an experimental bitter with the following recipe. I've never used Northdown before but Fullers use it and I very much enjoy a pint of Pride. I've also never added Chocolate malt to a bitter before but it's there in one of my favourite bitters of late: Darkstar Partridge so I'm putting the two together and doing this today:

85% Pale Malt
10% Munich Malt
3% Crystal 240 EBC
2% Low colour chocolate...

First go at cider!

So today I've just bottled 34 bottles of mixed fruit cider, and I bottled 11 bottles of pineapple wine a few days ago (going to be carbonated hopefully!) I don't like the swing tops at all on the pineapple as the seals are dodgy on a couple of them. Will stick to crown caps in future.

The pineapple was fully sweetened with sugar so I've pasteurised, and the cider was back-sweetened with erythritol so no need to pasteurise. Fingers crossed for good results!

This is a pretty straight forward how-to, especially as the instructions are included in the kits, but some people like myself work better with lots of pictures :D

Hydrometer discrepancies

Any guide me on this please ?
I've got two hydrometers - calibrated both today at 20c before checking FG on a stout.
One has a RED BAND
Calibration red band 1.004
Other spot on.
FG RED BAND 1.016/7
Other 1.008
So 4 points out at calibration and 8 or 9 on FG measure.
