Bavarian Weissbier Tips

Guys, I'm having another crack at a Bavarian Weissbier (such as Schofferhofer, Franziskaner etc) and to date I haven't been able to get it just how I like it, so I need your help!
I like it a slightly leaning toward banana, cloudy, and a full mouthfeel. I do BIAB and usually no chill. I don't make water additions but my water is pretty good and balanced.
I was thinking of trying Mangrove Jacks M20 yeast.

What are people's thought on things such as:
  1. Yeast strain
  2. Ferment temp...

Hey all,

After some advice please. 🙂

Upgraded my SS brew bucket to a domed lid today to do pressurerised transfers. Put the lid on a new batch and pitched the yeast starter early arvo then checked it later - no airlock activity (complete equilibrium on an S shaped kind) but Tilt is showing a drop in gravity and the smell is obvious. (I know airlock activity is not the be all and end all)

Anyway I noticed that when I took the lid off briefly to check the seal the airlock shows a build up...

Simcoe with Riwaka DH?

Hi guys,

I've been mainly brewing Belgian beers so I have limited experience with anything else.

I bought a fresh wort kit from my LHB labelled "Riwaka XPA" and suggests dry hopping with 50g of either Riwaka or Simcoe. I bought one of each thinking id do a 100g dry hop but am now wondering if the two will compliment each other or not?

Also I plan on dry hopping during active fermentation do minimise o2 as I'm bottling. Will either of these produce grassy flavours if left in contact too...

Small batch mead vessels

I've been trying to work something out this morning and thought I would see if anyone else has already solved this problem.

I usually brew beer but lately I've enjoyed doing a mead or two. I like that they're relatively quick and easy to start and it's just a nice change from beer.

The question I have is regarding good vessels for small batch primary and secondary fermentation.

For my first batches I used 5 litre demijohns for both primary and secondary. I did about 4.2 litres for primary...

Hi everyone.
Hugh here. New to Brewing.
Step son bought me a Mangrove Jacks Ginger Bear kit a couple of years ago for fathers day, and it pretty much didn't get used after that first batch.
But earlier this year, I decided to try cider from supermarket brand juice. 7 brews later, I've only had to toss a couple (so dry as to be undrinkable) and I've got my self an Apple and Pear cider from the last two batches that I'm happy to share around.
Also have a few gallons of Mead on the go, but...
