Hello everyone

Newbie to brewing. I'm interested in brewing fruit wines, meads and ciders. I'm a wife and mum to 5, and we have a small property in the
Adelaide hills. I'm into growing and raising my own food which is what lead me to this new adventure - a glut of fruit.

I've just made my first batches which were
!. cheaters plum liqueur (literally soaking plums in alcohol so I don't think it counts)

A nod to Crankshaft

Posted: 10 Apr 2021 09:37 PM PDT

Hello brains trust.
I brewed this a month ago and was very happy with the beer initially.
2 weeks in it lost most of its hoppy appeal.

Any suggestions on why this might be?

I put the dry hops in just after high krousen, purged with co2. Used a brewloon to capture co2 and used it for suck back at cold crash.
Full starsan keg purge with co2.

This is the most effort I have put into oxygen mitigation and the results have left me a bit bewildered.

Cheers in advance.

Ps I will be keg hopping...

Queensland Heat

Posted: 10 Apr 2021 07:21 PM PDT

Hi all,

just wondering how people get around the Queensland heat when brewing cider. My first batch has sit at 28-32 degrees and I'm not expecting the best tasting cider at the end plus I think it's finished fermenting in less than 4 days.
My brew needs to be in the garage but how can I keep it at an ideal temperature?
Thanks

bound sediment throughout wort?

Posted: 10 Apr 2021 06:55 PM PDT

Hello,

I am reasonably new to grain brewing and have done about 8 brews so far with some mixed results. This is my second batch using a clear fermenter and I have noticed something which I haven't seen before. You can see in the attached pictures, but there seems to be sediment or something all through the wort? I would expect a bit in the bottom, but it is attached to the float and line, and floating all throughout.

I brewed this yesterday using BIAB method, 60 minute mash of 4kg of...

Vinegar

Posted: 10 Apr 2021 07:38 PM PDT

Anyone make their own vinegar?
I bought some fresh apple cider vinegar with the mother in a while back, I am making cider so decided to sacrifice a couple litres for vinegar.

received_465899867947723.jpeg

I made cider with store bought juice (8 litres apple, 2 litres mango and peach) then siphoned a couple of litres off and added the mother from the ACV.

2-4 weeks and it should be done and should get better.

I want to use some to make pickles and use some for a hot sauce.

March 2021 Comp - Freestyle!!

Good Afternoon Homebrewers!!

Perhaps a little early but buoyed by the beautiful weather and having just brewed a hopefully cracking IPA I thought I'd start the March Freestyle Comp thread!

Judging will take place on either the first or second weekend of April. Covid dependant I may have a friend round to help drink them around a fire in the garden!

Freestyle of course speaks for itself, but i'm looking forward to judging a wide variety of beer, whatever you have, i'll drink and judge...

Best drink drunk?

Posted: 10 Apr 2021 05:50 PM PDT

For nothing further than my inquisitive mind, please describe to me the best drink you have drunk. I don't really care for the drink generally, but rather the specific "one". Why was this one specific drink special

That beer you ordered in a bar somewhere without knowing what it was, but can now never find again, on a stag do in Prague.

That weird local drink you had one time on holiday when you were sitting full from a family meal with your family.

That first legal pint after coming...

In a small village in Russia the village milking cow dried up, the villagers were panicking wondering what to do. A village elder suggested they go and see the wise man of the woods, so they traipsed up to where the wise man of the woods lived. Just got into all grain brewing after a very successful time extract brewing (belly shows it) for around a year.
I have done alot of reading around, looking into what goes with what etc. And I decided to start with my own creation.
It's got a lovely brown colour almost like a Newcastle Brown colour
Any guys or gals think these ratios and grains are ok, recipe as follows

Calling those fermenting under pressure!

Posted: 10 Apr 2021 02:44 PM PDT

Hi Folks,

After one too many oxidised brews I've adapted a corny keg to allow for closed fermentation, initially I'd planned to just use a blow of tube.

When I realised you could make a spunding valve cheaply I decided to give fermenting under pressure a go.

I'm reaching out for any information regarding yeast types, psi and temperature ranges as I'm keen to experiment fermenting at higher temperatures.

Do you ferment under pressure? Does it improve your beer? Is it worth it?

Maxi chiller for FV cooling

Posted: 10 Apr 2021 01:59 PM PDT

Im using a maxi 210 chiller for cooling. At present I use the agitator python pump in order to pump the glycol through my chiller. This pump is controlled from the FV controller and the Maxi looks after itself on a separate controller set at -5C (agitator does not run).

It seems to function great and much cheaper than a grainfather or SS alternative. However the Maxi python pump unit does not seem to have a massive head and the pressure is low. Could it need replacing? I seem to spend ages...

Hello, I'm new to the forum and thought I would say my hellos!

I've been home brewing for about six months now, with varying levels of success, though nothing undrinkable so far! Based in Manchester/Trafford, so there are a few decent home brew shops a drive away but I've mostly been sourcing bits online. For equipment, I've got an electricboiler that I've been using for mash and boil, with a mesh for dunk sparging, hoping to branch out mind.

To date, I've put together an IPA, few pale...

Another dreaded "has my fermentation finished?" thread.

Posted: 10 Apr 2021 01:39 PM PDT

Stout started out with OG reading of 1042, a vigorous first few days fermentation followed by steady bubbling slowing right down in the last few days. It's now had two full weeks in the fermenter and today airlock activity seems to have ceased so I took a reading which came out at 1020, which is only about 3% alcohol. I believe 1020 is within the realms of credibility for a final gravity, but I am a bit surprised as 1042 was lower than I was expecting to start with and 1020 is higher than I...

Having always said, 'I am not really a stout drinker', before Christmas I brewed a stout, mainly to give to a neighbour. This was based on a Coopers Irish Stout kit but pimped as per suggestions from @terrym.

Well all I can say is that my neighbour didn't end up with too many bottles as I found it bl###y luverly. Anyway, I am now moving away from kits and brewing small batch all-grain beers (around 10 to 11.5L), so thought a stout should be one of the next to do, so I...

First Time cooking a Cote D'Boeuf on the wood fired oven. 90 minute sous vide at 55C then about 10 searing time on the grill. I've done this loads on the BBQ, but this was a completely different meal. The smoky charcoal flavours are gone, and the higher cooking temp delivered the most amazing depth of flavour to the steak. I could still taste it an hour after eating. Best bit was my 17yr old did most of the cooking, and he can't wait for the next one.

BIAB question. Sparging

Posted: 10 Apr 2021 01:26 AM PDT

Does anyone sparge with BIAB?
I know you can run off from the tap and add to top but if you dont have a tap?
I have been hoisting the bag after mashing, resting it on an oven rack and trickling 76C water through the bag. Lately I have been trickling enough water to bring the volume up to boil level.
I may be picking up some astringency by doing it.
Does anyone else do this or use any other method or do most just not bother and hoist the bag only?

Queensland Heat

Posted: 10 Apr 2021 01:23 AM PDT

Hi all,

just wondering how people get around the Queensland heat when brewing cider. My first batch has sit at 28-32 degrees and I'm not expecting the best tasting cider at the end plus I think it's finished fermenting in less than 4 days.
My brew needs to be in the garage but how can I keep it at an ideal temperature?
Thanks
