Food Gardening

Posted: 05 Jul 2021 07:30 PM PDT

Hey all,

I am very new to growing some food plants. Had chillies for a few years, some berries and herbs.
Last year I planted my first hops and had a decent crop. Can't wait until this years harvest.

In the meantime, I have a nice little spot in the garden where I WAS going to plant more hops. This is a sunny spot with about 2metres of climbing trellis. Anyone have thoughts of what food plant would grow there? Have been thinking of some sort of bean, but open to any suggestions.

Quick one guys - are screw top plastic bottles okay for elderflower champagne or do I need to get hold of proper glass ones?

Fizzy stout.

Posted: 05 Jul 2021 04:30 PM PDT

Hello everyone.

I've just put a Mangrove Jack's Irish Stout (following the kit recipe) into the garage for the last 7 days of conditioning, that was bottled 10 days ago. Obviously had to test it.

It's too fizzy for a stout.

Does anyone have any recommendations as to how I can calm it down. My ideas were either to shake it well before opening or alternatively undoing the lids now in a hope that it flattens this week.

Does anyone have any suggestions please?

Phil.

Saison recipe

Posted: 05 Jul 2021 03:36 PM PDT

Hello all
Looking at my books and online Saison beers seem to primarily brewed with Pilsner malt...I don't have any...can I sub with pale?
If not I need some bits from MM so could wait til later to order to see if I can catch the window for malt orders...
I also have a load of frozen fruit off the allotment... raspberries, tayberries, gooseberries..can I use these?
What's your "go to" Saison?

Things to ponder with concern regarding the future

Posted: 05 Jul 2021 03:13 PM PDT

A few concerns of mine:

1) ERoEI (energy returned on energy invested). When more energy in one form is expended whereby to yield less energy in either the same or another form things get interesting. For but one example, if it takes more refined gasoline consumption whereby to extract crude oil from the ground than can then be converted into gasoline via processing and refining the extracted crude oil, then does it become game over for using gasoline power to extract crude oil?

Family car recommendations?

We've been happy with it, in particular the size, versatility and solid build. We've got 3 kids between 6 and 14, want petrol because we don't do huge numbers of miles and want 3 proper seats in the back. Could be labelled SUV, MPV or estate but we want plenty of boot space.

Is capitalism exploiting you?

Here's the video saying it is:
Here's my response:
The employee is exploiting the capitalist's capital to maximise the value of there labour which would be worthless without the capitalists money/capital that they had to risk and likely alot of there own labour which they have not yet got any payment for. The employee can just walk in and demand a regular wage they get even at times the capitalist could be making a loss, they even get holiday and sick pay...

Low volume wort after boiling

Posted: 05 Jul 2021 12:44 PM PDT

Hi,
Can anyone offer some advice please.
I prepared my first all-grain brew last week and after mashing and sparging I had the recipes recommended 27L to boil, after boiling according to the recipe I should have been left with 21L but actually only had about 18L although the SG was as expected at 1.040.

I'm not sure whether I should have topped up the volume from 18L to 21L or just continued to ferment the 18L.

Any guidance would be appreciated.

Recipe for Disaster!

Posted: 05 Jul 2021 12:43 PM PDT

So, the title sums this up very well.
I have a friend who is obsessed with foraging and they want me to make them a beer using white clover flowers that they have foraged in the beer. Yes, yes I know this sounds ridiculous.

Apparently, they're edible (although in warmer climates aren't) I've had a little nibble and they have a very mild honey flavour and fragrance and aren't too unpleasant. But they're pretty nondescript.

I'm going to humour them and do a 5-litre batch.

The Ottoman-Era Beer That Shapes Modern Turkey

Posted: 05 Jul 2021 04:08 AM PDT

Beer is the undisputed favorite alcoholic beverage of residents of Istanbul, Turkey’s most populated city. Despite Turkish government efforts to stifle alcohol production and consumption in the country, the former Ottoman capital still maintains a burgeoning craft beer scene.

For evidence of the drink's deep-seated roots, look no further than the small neighborhood of Bomonti in central Istanbul, where remnants of an Ottoman-era commercial brewery still stand.

The neighborhood is named after the old Bomonti Brewery, opened by Swiss brothers in 1893. Beer had been available in the empire at the time, but its quality and price varied widely, says Malte Fuhrmann, author of Port Cities of the Eastern Mediterranean: Urban Culture in the Late Ottoman Empire.

“It could be imported beer, especially from Munich, [which] was very prestigious, consumed in some very downtown places," said Fuhrmann on the Ottoman History Podcast. "It could also be something some railway worker, at the end of his shift, would consume in a bar somewhere in the more shady parts of town.”

The Bomonti brothers weren’t the first to market beer in then-Constantinople, but they were first to rival the quality of imported brands from Western Europe at an affordable price. After Bomonti and its contemporaries, Olympos Brewery in Salonica and Prokop Brewery in Smyrna, opened during the latter half of the 19th century, demand for imported brews took a nosedive, and consumption rose.

Widespread availability and lower beer prices contributed to an “evolving new leisure culture,” in Ottoman cities, writes Fuhrmann, and the drink became “an essential part of the urban public sphere.”

In Constantinople, revelers indulged in a beer garden adjacent to Bomonti Brewery or the public park on Çamlica Hill, which offered sweeping views of the Bosphorus Strait and the Marmara Sea. The narrow alleyways and streets around the brewery came to bear names like “Barley Juice,” “Beerhouse” and “Behind Bomonti,” which endure today.

Olympos and Prokop didn't enjoy the same success as Bomonti, which commanded the largest market share and even gained favor with Sultan Abdülhamid II, who made the brewery an official supplier of the imperial court.

With Bomonti as its chief producer, Constantinople was responsible for 76% of beer production in the empire at its Ottoman-era peak on the eve of World War I.

After the war and the foundation of the Turkish Republic in 1923, Bomonti Brewery pressed on in various forms. After a 1928 law decreed that alcohol producers had to be registered as joint-stock companies, the Swiss Bomonti company was forced to sell to a Turkish company formed for the occasion.

Its new owners were granted a license for beer production for the next 10 years. When that expired in 1938, the Turkish state took control of the brewery. Production continued under a series of new names until 1991, just two years short of its centennial.

The brewery’s recent history is bittersweet. When production ceased, its machinery was sold for scrap. A local university built a satellite campus on the grounds of the former beer garden, and the old production facilities were leveled to make way for a high-rise hotel.

The factory’s old malt and barley cleaning buildings, vat and silo were marked for conservation as industrial heritage in 1998, but they, too, were recently demolished after being transferred to Turkey’s Presidency of Religious Affairs.

Some of the brewery’s central buildings, their yellow and red-bricked facades reminiscent of Central European castles, still stand. The space has been repurposed as a thriving cultural center and even carries on the original site's storied tradition, having become home to a microbrewery called Torch, which opened in 2016.

According to brewmaster Philip Green, Torch Brewery relies on custom-sized equipment and a “less-than-ideal” floor plan to operate in the century-old space. “It is an incredible feeling to be producing beer in such a historic location,” says Green.

Today, Bomonti Brewery is memorialized in the cultural center on its old grounds and a series of namesake brews from Turkish beer producer Efes Beverage Group. Perhaps best, its spirit lives on in those public meeting places where defiant Istanbulites continue the tradition of coming together for a drink.

The enticing combination of homemade pasta and delicate lobster in fresh tomato sauce is a staple at seaside restaurants along Croatia's Dalmatian Coast and its multitude of islands.

Chef Špiro Pavlić created this version for Vinaria, the restaurant at Saints Hills Winery on the Pelješac Peninsula, a finger of land that extends for 40 miles in the Adriatic Sea. The recipe features homemade fettuccine, but you can also skip that step by using dried fettuccine and cooking it according to package directions.

I am looking at purchasing a 30l beer me boiler for BIAB. As this has no temp control i am using my inkbird 308. I know i could get a digiboil 35 for the same job but as i am looking at between 15 and l8l using my fermenter king junior i feel this is a waste. My question is profile set up. I will determine the boil of rate by boiling water for 60 mins. As there is a space under the tap is this mash tun deadspace. Or should i use this as trub chiller loss as i no chill.
