I got into pressure fermenting for one reason, I was curious about brewing lagers and I don't have space to chill a fermenter. What I didn't realise was that when it comes time to bottle from a kegmenter (or pressure ferment vessel) that standard wisdom says I need to chill the beer anyway.

I decided to experiment with room temperature carbonation and room temperature bottling.

I fully expected to pour foam and nothing else until I thought about 3 things:

Gday,
I'm pretty new to home brewing and am trying my luck at making a PB&J porter, I'm reluctant to use strawberry jam as I've heard it's hard to get the flavour to come through as the majority of it ferments out. I've decided to use strawberry schnapps or strawberry extract and would like some info on when best to put those in the brew? Primary, secondary, cold crash etc?

I was looking up on how a nitro/stout tap works and (there may be more to it than this but) it seems that you're just pushing the beer through an orifice plate at high pressure to get the creamy affect. My first thought was can you include an orifice plate into a regular tap? I know you can get screw on tap tips that include a orifice plate but I was wondering if anyone has done it to a tap that doesn't have this option? Is it possible to make you own orifice plate and install it at one end...

Guys, I'm having another crack at a Bavarian Weissbier (such as Schofferhofer, Franziskaner etc) and to date I haven't been able to get it just how I like it, so I need your help!
I like it a slightly leaning toward banana, cloudy, and a full mouthfeel. I do BIAB and usually no chill. I don't make water additions but my water is pretty good and balanced.
I was thinking of trying Mangrove Jacks M20 yeast.

I ran out of beer twice with my first 2 kits. I drank them faster than I made them. So decided to take a break from drinking them and build up a stash. I collected enough bottles for 5 brews. So started building up a healthy inventory of homebrew kits.
I bottled the Juicy Session IPA this evening. In 4 weeks I'll be enjoying the fruits of my labour.

Hello Everyone,

I am a newbie in Homebrewing and i am doing my first try with a bavarian Wheat of Mangrove Jacks. I have done whole the process correct i believe and i want to ask some questions.
I am in 13th day of fermentation. I still have bubbles (1 every 10 minutes).
Are the bubbles a criterion for the completion of the fermentation?
Is this the time to take a SG reading in order to check if i am in the desired one? If i am not mistaken the SG reading should be the same for 48 hours...

I was hoping to start an EKG smash this weekend, but the lhbs closed early so I'm 2kg short of pale malt. I do however have a tin of Cooper's lager so could make that, but have no malt extract. I could mash the small amount of M.O. I do have (about 2.5kg) and add some hop pellets (EKG, first gold, challenger, saaz, Perle, mittelfruh) but have no idea how to plug those into a brew calculator for 22L.
Any ideas ? (it doesn't have to end up as a lager)

Hey, im Steven, and new to the forum.

Im just starting out in one gallon (4.5L) brewing. I have all the equipment i need, and im going to start off with a simple recipe using DME and a 15min boil, which i saw on youtube.

20 European clubs have "signed up" to join the European super league including 6 English teams. For me this is a terrible idea driven purely by greed. It could be a negotiating ploy of course but I'm not so sure. The European Cup was devalued when the 4th played team could enter the Champions League so you had Lverpool vs Spurs in a final where neither had a league title in almost 80 years combined.
I hope the whole concept is scrapped ASAP what's other people's views?

Added dry hops 5 days ago and everything appeared fine, was going to transfer to PB today and found this.
Also cleaned out dregs of PB I finished this weekend and found similar.

I guess a deep clean is required- what is the best way to go about it.

I've been home brewing for many years, originally with kits & extract but All-Grain for the last 10 years.
Whilst 'working from home' due to the corona virus, my brewing has picked up & I decided to look at my stocks of grains & hops, as I have been known to buy grains & hops to match specific new recipes.
All my grains/malts are pre-crushed & stored in cool air-tight, water-tight, light-free barrels - not in fridge or freezer
Most of my hops are still vacuum packed & stored in cool...

I have moved 20l of dark strawberry Belgium style beer kit to the pressure barrel to condition.

Yeast needs oxygen to condition the beer, improving flavour, etc.

Will putting extra CO2 into the pressure barrel kill off the yeast and stop conditioning the beer??

When do you start drinking a new brew?

It's carbed up and I was planning on serving through a beer engine.
When would you think this is ready? I usually drink early but not sure I should be for this style.

Quince Wine Recipe – Bright, Refreshing White Wine

Quince Wine Recipe

Quince is not a great looking fruit, looking like a lumpy apple, pear hybrid. It does, however, make a fantastic tasting wine. Quince is a hard, almost inedible fruit until they are cooked and they turn soft, sweet and taste like a cross between apple, pear and lemon.

If you have a quince tree then of course you will have a plentiful supply of quince in the autumn. If not then you will need to buy them. 

Quinces tend to be quite seasonal and not commonly available in most supermarkets. The best place to find them are farmers markets and local grocers, my local greengrocers have them for very little money so making wine with them is a no-brainer.

Quince In Wine

Uncooked quince is bitter, astringent and quite sour so today it tends to be quite overlooked and not that popular, hence why it is hard to find in supermarkets. That was not always the case, in 1275 Edward I ordered that quince trees be planted at the Tower of London and they are still commonly used to make jams and jellies in the UK today.

This quince wine recipe will make a dry, white wine and the flavour will be reminiscent of apple and pear with a little melon note.

Careful Quince Cooking

The quince will need cooking before we can make wine with them and this needs to be done carefully. Cooking quince will release pectin and this makes it a lot harder to clear the wine once it has finished fermenting.

A short 15 minutes of cooking and a teaspoon of pectolase will help ensure that the maximum amount of sugar and flavour can be extracted from the fruit without making the wine cloudy.

The fact that quince needs cooking lends itself to winemaking and preparing the quince exposes the flesh so the maximum amount of juice and flavour can be extracted.

Preparing The Quince For Making Wine

It can be a little bit laborious preparing quince for cooking and then making wine. With the help of a food processor you can speed things up but the fact is that all the fruit needs grating and you'll need to grate around 20 quinces for a gallon batch of wine.

Quince has a central core just like an apple so you can either cut the quince flesh away from the core or you can grate the quince down to the core. Either way, we want to leave the core out of the wine.

You can leave the skin on the quince and grate this into the wine as it will add tannin and flavour.

Once all the fruit is grated you can cook the quince for 15 minutes as I will detail in the recipe.

What You'll Need To Make Quince Wine – Makes 1 gallon / 4.5 litres

  Quince Wine Ingredients

To begin grate the quince with the skins but leave the core. Either remove the flesh from the core or grate as close as possible to the core. Put the grated quince in a pan and from the 4.5 litres of water use just enough to cover.

Cook the grated quince for 15 minutes and no longer. Longer cooking will release pectin and will prevent the wine from clearing. Place the straining bag into a sanitised fermenter and then pour the quince pulp and liquid into the straining bag.

In a large heavy-based pan combine half of the remaining water with the sugar and bring to a boil stirring to avoid scorching. After 5 minutes of simmering pour the boiling sugar solution over the quince in the fermenter.

Add the remaining cool water to bring the temperature down and then add the mixed acid, yeast nutrient and give everything a stir with a sanitised spoon. Cover and allow the must to cool to room temperature.

Once completely cool add the Campden tablet and then cover and leave to stand for 24 hours. Take a hydrometer reading at this point should you wish to note the ABV of the finished wine.

After 24 hours add the pectic enzyme, stir with a sanitised spoon and then sprinkle the yeast onto the surface of the must. There is no need to stir the yeast in, cover with lid and airlock and then allow fermentation to being.

Fermentation will start after around 24 – 72 hours and can be noted by bubbling of the airlock. For the first 7 days take a sanitised spoon and turn and stir the quince pulp which will likely float on the surface of the wine.

After 7 – 10 days fermentation will subside and activity will decrease. Lift out the bag of fruit pulp and allow it to drain without squeezing and extracting pectin. Cover the fermenter again and allow to settle for a further 3 days.

After 3 days it is time to rack the quince wine to a sanitised demijohn/carboy. Siphon the wine into the demijohn and then seal with a bung and airlock. The wine will continue to ferment and then condition in the demijohn before clearing after a few months.

Rack the wine at intervals whenever any sediment builds at the bottom of the demijohn. It is good to allow the wine to condition in the demijohn for up to 4 – 6 months which will allow the flavours to mellow and any byproducts of fermentation to even out.

After conditioning for several months and the wine has cleared you can proceed to bottle. You may wish to take a sample of the wine and back sweeten if you prefer and sweeter finished wine, instructions for doing this can be found here

Once bottled set the quince wine aside for a few months before sampling.

Thanks to the larger health and wellness movement, the low- and no-alcohol category is forecasted to experience faster growth than both beer and wine between 2020 and 2024 with an expected CAGR of 20.6%, according to The Spirits Business. As consumer demand for the category increases, there is also a global rush to meet it from both new and international players.
