How much dextrose and lactose to add to cider?

Posted: 07 May 2021 07:09 PM PDT

Hi all,

I am about to do my second batch of cider (23 litres), my first was from a Mangrove Jacks pouch, but this one will be using Coles Apple Juice. I have mangrove jacks m02cider yeast and will be fermenting at 20 degrees. My questions are
1- to get around 8-9% abv how much extra dextrose should I add to the fermentation?
2- when I want to semi-sweeten it at the end, how much lactose should I add, and will the taste before bottling be roughly the taste after sitting in the bottles for a...

Gambius Honey Malt

Posted: 07 May 2021 06:34 PM PDT

Anyone out there that has used Gambius honey malt additions to their brews? I made an ale based on 70% pale schooner and 30% voodoo. It's a slightly boring brew, nothing really wrong and with that amount of Voodoo I didn't think it would really need much in the way of other additions. I was thinking about doing again and maybe even cutting back on the Voodoo and adding some of the honey malt to it, but haven't used it before. Any thoughts would be appreciated?

PET Kegs and more

Posted: 07 May 2021 02:27 AM PDT

Starting a new thread here about PET Kegs for the home and craft brewers. A competitor of ours suggested on AHB recently for people to try using one of our low cost fermenters in a trial to see how well beer would store for 3-6 months. We cannot gauge the motive behind this accurately but suspect that it was not to be for our benefit. Also as the competitor sells their own PET fermenters why would they not suggest the trial be done in one of theirs? The only reason we can think of is that...

My Australian Monster

Posted: 07 May 2021 07:38 PM PDT

Like Doctor Frankenstein I am seeking to combine and reanimate the dead!

I've posted previously that I came into possession of an out of date Coopers Australian Lager kit and was pondering what to do with it. I found some information from someone who has tried brewing old kits and reported that they are still OK to use (in my case the can itself looked in good condition) but fermentation may take longer and have a higher finishing gravity. Using it to bulk up another...

Which movie(s) have you watched recently?

Posted: 07 May 2021 05:29 PM PDT

I'm a bit of a cinephile, movies are probably my second love after brewing, I have a "watchlist" which is almost as long as my "brewlist" and I try to watch a couple of films off it each week.

I'm always open for suggestions and love hearing what people have watched recently, what their opinion was and why.

With such a melange of people on the forum I'm sure I'm not the only one, so what are you watching, or have you watched recently?

I'll go first, last night I watched...

Which movie(s) have you watched recently?

What did you learn today?

Posted: 07 May 2021 04:28 PM PDT

Today I learned that if you're going to poke a spoon (well, a cake slice, don't ask) into your wort, sanitise the whole thing and not just the business end . . . Because when, not if, it slips and falls in you will worry less what nasties you may have introduced.

e-bike and e-scooters.

Posted: 07 May 2021 04:08 PM PDT

Posting this here as i don't want to hijack the cycle thread.

Why is it legal to ride an e-bike in the U.K as long as it does not exceed 25kph (15.5mph) or have a motor which generates more than 250 Watts of power but it isn't OK to ride an e-scooter on public roads, pavements, in cycle lanes and in pedestrian-only areas?

The government wants us to go green yet they ban the use of electric scooters, crazy.

SWMBO is a front line worker (carer) she has had the first jab and is now tested twice a week she also has the lateral flow test with the results showing 30 minutes after the test whenever she goes to work on the other days, there are no cases of Covid where she works and there hasn't been for quite a while.

I am hoping as a front line worker my turn will come soon my age will also help, its not often i am glad i am an old fart. :laugh8:

Ban on new petrol and diesel cars in UK from 2030 under PM's green plan

Wilko Feeling Hoppy

Posted: 07 May 2021 03:12 PM PDT

Afternoon all,

Recently gotten into brewing and picked up the 'feeling hoppy' IPA kit from Wilko's Artisan range.

Just thinking about additions I can do, as my experience of other homebrew kits people have done is they can often come out a bit watery and flavourless.

It's a 1.8kg kit with 10g Amarillo hops. I was thinking:

Add 1KG Beer enhancer and 500g Light Dry Malt Extract to the kit.

Add a hop tea using the 10g Amarillo (is 10g enough?)

Pitch yeast at appropriate temperature

Maths failure....

Posted: 07 May 2021 02:27 PM PDT

Can anyone advise me on the following - don't think my record keeping was quite up to scratch, but I'm still very much a beginner!

I made some parsnip & ginger wine and noted the following:

O.G. 1.112 (with 2.5lbs sugar and a lot of parsnips and yes, I now know that's disastrously high) - it went down quite a bit (not recorded) so
Added another 8oz of syrup which made it 1.118 (overdid it a bit there...)
Went down to 0.986 so I added another 5oz. syrup
Went down to 0.994 so I added...

The Great Watney's debate

Posted: 07 May 2021 02:01 PM PDT

In a couple of weeks time I am gonna start to BIAB. I was going over this book by Dave Line 'Brewing beers like those you buy' first published in 1977. Perusing through this fine book. I found many recipes for beers still sold today. And then I came across these Watney's recipes (ie Watney Cream label, Watney Mann Brown Ale, Watney Mann Special Bitter, Watney Mann Starlight Beer and Watney Mann Mild - but no red) So I thought, hmm I had not heard of this brewery so I'll check it out. yeast

Posted: 07 May 2021 01:46 PM PDT

Currently about to use M76 yeast for the first time to make a lager. Modified a fridge yesterday to keep my fermentation at 10 degrees. It says the yeast should be 8-14 degrees in fermentation, but what about pitching temp? I was thinking of pitching around 18 degrees then after about 6 hours turn the new fridge set up on so it slowly brings the temp down... And should I use 2 packets in 23L.. Thanks in advance

Ive used the wrong malt!

Posted: 07 May 2021 01:41 PM PDT

Brilliantly I've manged to screw up a recipe that has 2 malts and 1 hop.
It was supposed to be a mosaic pale ale using 5.2kg of pale and 100g dark crystal but I picked up black crystal instead!
Any idea what beer style this will give me as I no longer know what to call it...
It's much darker than it should be, like a Mild or even a porter.

Will Hybrid Retail Concepts Endure Post COVID?

The pandemic kicked off an evolutionary period for the modern wine shop as bars and restaurants scrambled to turn their spaces into retail establishments, while off-premise retailers were forced to get into e-commerce. The result is new platforms for conversation, education, and sales, and a blurring of the lines between on and off-premise. But will the hybrid spaces endure post pandemic?
