Munich 2 (dark munich) pale ale

hello brewers, I have a question on Munich 2 malt.

I have a lot of cascade hops, so was going to make a pale ale - but then I also have a lot of M2 malts, so was thinking of doing a 50/50 pilsner/M2 and using a the cascade for bittering/aroma/dry hop schedule.

did anyone make a pale ale with M2 malt ? if so, how was it ?

Guys, I'm having another crack at a Bavarian Weissbier (such as Schofferhofer, Franziskaner etc) and to date I haven't been able to get it just how I like it, so I need your help!
I like it a slightly leaning toward banana, cloudy, and a full mouthfeel. I do BIAB and usually no chill. I don't make water additions but my water is pretty good and balanced.
I was thinking of trying Mangrove Jacks M20 yeast.

What are people's thought on things such as:
  1. Yeast strain
  2. Ferment temp...

Hi Brewers,

Very new to this brewing scene, but excited to get more into it, only been fermenting bottling and kegging brought worts so far but keen to do the whole deal.

I'm guessing this topic has come up a lot but couldn't find a clear answer on what is the best option in previous posts so here I am. I want to brew single batch's (20Lish) pale ales, pacific ales, and beers similar to this which I believe use around 5 kg of grain per 20kg brew am I right?.. I'm interested in the cheeky...

dampfbier - any tips

Hi there,

i did a search on this forum, and the wider internet for dampfbier, but it is a mixed result.

has anyone brewed this beer and would you share your findings.

i have a 3068 slurry, and thought - what can i do differently with this little bit of happiness, and dampfbier was a suggestion from a mate. so, ill give it a go.

i was thinking
1.052 OG
80% pale male
20% Munich 2
30g hallertauer @ 60 mins
200g 3068 slurry (in a 500ml starter)

Quick question. I want to do a few small runs BINB to ferment 4 litres in demijons. The problem I have is the largest pot i have is about 6 litres.
Now am I right in thinking I will need a minimum of 10 liters due to water boil off?

The 'Recommend me a TV series' thread

Just one episode of series 4 of The Americans left to watch before moving on to series 5.

For anyone that hasn't seen it, it's set during the cold war and is the story of two Russian agents living a 'normal' family life in America.

The pace has never dropped over four series and I've enjoyed every episode. Brilliant TV. Oh, and Keri Russell is absolutely gorgeous, which also helps.

Which TV series would you recommend?

I picked 3 1/4 lbs of redcurrants and whitecurrants from our bushes this evening, about 70% red and 30% white. Stripped them off their twiggy things and poured a gallon of boiling water over them in a fermenting bucket.
The recipe says leave the bucket in a cool place for a week and don't worry if there is mould on top of the must. Now I don't like the sond of mould, so I've crushed up a campden tablet and stirred it in. Hopefully, that will keep mould at bay.

It's only a small concern, their website only mentions 'opening times', so I assumed there'd be a shop of some sort...

I poked my head round an open door. Piles of 25 kg malt of all types on the floor, large fermentors, piping... There was a guy there. I said, can you sell me some beer? Aye, ask in the office.

Anyway I walked away with an assortment of beers, principally the Pudding Shop Milk Stout, which I know is very nice. For twenty quid. I was pleased to see that most of their beers...

1. Anyone tried it and if so what are your thoughts ?

2. Doesn't mention any timings for dry hopping in the recipe. Was thinking of throwing the dry hops in on day 3 or 4 of fermentation but what duration should they be left in for ?

Just finished off my keg of this, was my first try at a 'big' brew after a few ones done in the Pinter and was ok-ish, I think the 'ish' was probably down to my mess-ups, I accidentally dropped half the hops in at the beginning of fermentation when trying to jerry rig something with bags and magnets!

It remained cloudy for a few weeks but the keg cleared reasonably for the last gallon or so. Was very 'brut', fermented out to 1.004 from an initial 1.052, with a pretty bitter finish (possibly...

Purchased a Sierra Nevada Pale Ale Clone from The Malt Miller. First brew using my SS Brewbucket, thought I'd chuck a kit onto the order too. Service from TMM was excellent

Brewed this on 23rd Jan.

5.45kg lager malt
450g pale crystal malt.

30g Northern brewer @60m
30g Cascade @ 30m
Protofloc@15m
70g Cascade @ 0m

1/2 Camden, 1tsp gypsum & 25ml CRS added to mash water.

5ml CRS added to sparge water (7l)

Heated up 27l of water in...

IWSR Predicts Increased Opportunities for Premiumization

Consumers accumulated an extraordinary amount of savings during pandemic lockdowns, creating significant opportunities for premium products, according to IWSR. Premium-and-above spirits in the U.S. recorded close to a 10% volume gain in 2020 and are expected to post a 7% gain in 2021.

The gains are driven by varied offerings in premium-plus spirits, celebrity endorsements, and brands adapting to at-home consumption trends. Many brands have shifted resources to target consumers at home, using resources such as e-commerce, digital communication and social media. 

“Covid restrictions have led consumers to appreciate the value of at-home treating through the purchase of premium products," explained IWSR research director Jose Luis Hermoso. "The pandemic has put a lot of things into perspective, and ‘carpe diem’ is back on the agenda."
