Water additions

Posted: 06 Jun 2021 04:23 AM PDT

Hey all,

About to dive into mineral additions to attempt to replicate a water profile.

Given the sydney water website locates your address and will then spit out details specifically for brewing, ive come up with the below beersmith calcs for a burton on trent water profile. Does the attached look about right?

As i'm a chemistry novice, will the additions correct the PH, as apprently BOT has a PH of 8, would you buffer this to 5.4 for mashing/sparging?

Buckwheat Groats versus Malted Buckwheat in gluten free beer

Posted: 05 Jun 2021 11:20 PM PDT

After suddenly becoming gluten intolerant this year, I'm looking at getting into gluten free home brewing as buying commercial made is expensive. I have some recipes I'm going to try out but am looking at Buckwheat as one of the grains I will use. I have a recipe that involves just using unmilled Buckwheat Groats (and toasted red lentils) in a bag in your brew kettle while you heat it up to 71 degrees then remove the bag.

I had another recipe that involved toasting the groats then...

I will kick it off with -

Washing the steps.

I remember the house wives (it was ok to call them that back then) washing the steps in our street then rubbing the front edge with what i believe was a donkey stone to make it bright white you can still see the steps today with the warn edge on the old streets here.

Another Kegerator build

Posted: 06 Jun 2021 03:43 PM PDT

Not terribly original but I'm going to be starting my kegerator build this weekend and have a few questions that I've not found answers to in searches - well one really at the moment. I'm not an engineering expert and already realising my fridge isn't ideal as a kegerator - but I have it now and am going to make the best of it. The fridge has a freezer section on top as I was looking for dedicated hop storage space, this does mean the taps and handles need to be low enough not to project up...

Beer and football

I have my first homebrew (wilko stout) due to be drinkable on the opening day of the Euros. I think I might wait for my IPA to be ready instead as stout feels like more of a winter beer!?

Is anyone else planning to drink their homebrew and watch the football?

So here goes with AG01 after 11 kits over the past 12 months.

I gained courage having read the @clibit thread. Having read it from start to finish I decided to follow his Citra Pale Ale recipe rather than the simple smash.
His recipe was for a 10L batch which I upped to 15L batch and is:
Marris Otter 2.250kg (83.33%)
Caramalt. 0.150kg (5.56%)
Wheat malt. 0.150kg (5.56%)
Dextrose. 0.150kg (5.56%)
Mash at 66*C 60 minutes.

AG#15 "Podium" Late Hopped IPA ('cos there are 3 kinds of hops, innit)

This is actually a rebrew of my AG#5, probably still my personal favourite brew to date - but there are a few tweaks, oh, and some stuff to make it way more complicated than it needed to be - why can't I just keep things simple!

Bung for Boot’s pressure barrel

Posted: 06 Jun 2021 01:53 PM PDT

The bung in the lid of my trusty Boot's pressure barrel (where the S30 valve would go) is cracking (see attached picture) and no longer holds a seal. Does anyone know where I can buy a replacement? HB suppliers that I have checked under barrel spares don't have anything like this. If not, I'll just get an S30 valve. Thanks in advance.

Hi from Bedford

Hi, thanks for having me as a member.
I'm returning to home brew after a 10 year break (from brewing, not beer).
Things have certainly changed. The girl in Boots thought I was mad.
Anyway, I've started off with a Wilko Thirsty Devil Red Ale kit, a Geordie lager kit 5 years out of date (new yeast though), and 10L of turbo cider following the recipe on here. What could possibly go wrong?
My other project this week is restoring a 1977 Black and Decker Workmate that someone left out for the...

Made this short to 22ltrs. As pre normal instructions are simple and easy to read.

finished gravity wasn't far off what should be- although I'm getting feedback it's stronger than was expected.

Only bottled 3 weeks ago but have to say this has went down a treat with the hot weather. Full of body and colour, lovely flavour. Now:
So I compared it to a Wolfe bass Chardonnay from Tesco £8.80 a bottle and have to say wineworks is 100 times better. I feel like I have just thrown away £8.80...

Fermenter to keg transfer.

Two years kegging and tonight I decided I would try using the beer in port and wow how easy it is.

Equipment : Syphon hose, beer in post connection with barb and a corny keg.

Simply setup transfer as normal but rather than place the tube directly into the fermenter connect start the syphon with beer in the line then kink to stop the flow momentarily whilst you connect the hose end to the barb connection and its done.
Simples as the only thing left is to wait until keg has filled leaving...

Artichoke’s Many Characteristics Make it a Perfect Wine Partner

Posted: 06 Jun 2021 04:00 AM PDT

artichokes
Photo Courtesy Jamie Chung / Trunk Archive

If there were ever a rule meant to be broken, it’s that artichokes are “impossible” to pair with wine. Whether steamed, stewed, roasted, grilled, deep-fried or even shaved raw in a salad, artichokes’ subtle flavor and meaty texture actually suit a variety of pours. The trick is to account for their cynarine, a naturally occurring compound they contain that can increase the perceived sweetness of anything consumed alongside it. If you keep the wine dry and crisp, however, you can focus on some of this thistle’s more tempting traits.

GRASSY

Artichokes have an elegant herbal character reminiscent of fresh-cut grass. Sancerre, made from Sauvignon Blanc in the Loire Valley, shares this grassiness and has a crisp and bone-dry profile that makes it perhaps the best wine for artichokes.

NUTTY

The intrinsic nuttiness of artichokes is accentuated by high-heat cooking techniques like grilling or frying. While dry vermouth is often used in cocktails, on its own, it has savory botanicals that make a terrific pairing with an artichoke’s richer notes.

SHARP

Artichokes have a brightness that can come across as pleasingly tart, but can also seem bitter or metallic. To round everything out, match this quality with a high-acid wine with fuller body, like Greco di Tufo from Campania in southern Italy.

TANNIC

These vegetables are one of the few with tannins. When tannic foods meet a tannic red wine, each can taste bitter. The comparably subtle tannins in skin-contact white wines are more harmonious and would bring out an artichoke’s sweetness.

$1100 - Thornbury

Regretful sale, I have my first kid on the way and something's got to give... unfortunately for me it's going to be my homebrew set up. 😥

I'll be gruff just for a moment. As the sale hurts, and the price fair (at least I think it is!), the price isn't negotiable... So I'll ignore any questions about price. If it doesn't sell I'll lower the price in time. Also it's to be sold as the lot. I won't be breaking it apart.

This will suit anyone who'd like to try it all out...
