Kiwi Wine Recipe – Fruity, Tropical White Wine

Kiwi Wine Recipe

Kiwi fruit is surprisingly inexpensive and they are available year-round so they make a great fruit wine when everything else is out of season. 

Kiwi wine is never going to be as popular as something like strawberry wine but in terms of the level of flavour both are around the same. Kiwi fruit also has the distinct advantage of being in supermarkets in the depths of winter. Kiwi fruit is grown in multiple regions and ripen well after being picked so they are available year-round in most places.

Kiwi wine makes a nice crisp white wine (with a tinge of green) and has an almost tropical flavour with melon and tart berries. You can make kiwi wine in the winter and it will be perfect for when the summer comes around to enjoy sitting outside in the sun.

Sourcing The Best Kiwi Fruit For Making Wine

Kiwi tends to be relatively cheap at most grocers and supermarkets. This is often because they need to be ripened at home. This is not a problem but does mean a bit of planning is required to make this wine.

We need to use the ripest kiwi fruit we can get, this means the stage just before they get mushy.

If you are buying hard, unripe kiwi to ripen at home then you can let them get to just the point when they are at their ripest and then peel them and freeze them. Freezing them will prevent them from spoiling and mean you can put the fruit aside as and when they are at their ripest.

Of course, you don't have to freeze them but it means you can manage a lot of kiwi fruit ripening at different rates and collect them ready to make the kiwi wine without any fruit spoiling.

Get Creative With Kiwi Wine

Kiwi fruit make a great partner to many other fruits and flavours. It is worth experimenting with some combinations to make a truly unique wine.

Kiwi and strawberries work really well together and the combination seems to boost the strawberry flavour as well as bringing a fruity quality.

You could also try pairing kiwi with some bolder flavours like ginger or tropical fruit like pineapple that makes a terrifically flavourful wine when most other fruit is out of season.

Kiwi also works well in floral wines, providing some crispness and acidity in what can otherwise be a floral wine that lacks body and bite.

Take the kiwi wine recipe below and try swapping some of the kiwis with other fruit or add some other flavours to create something really unique.

Kiwi Wine Recipe

What You'll Need To Make Kiwi Wine – Makes 1 gallon / 4.5 litres

  Kiwi Wine Ingredients

In a large heavy-bottomed pan add the sugar with half of the water. Heat and stir to dissolve and bring to a simmer.

Whilst the sugar solution is heating, prepare the kiwi fruit. Peel and cut the kiwi into chunks and place the fruit in the straining bag tucked into the sanitised fermenting vessel. Mash the fruit roughly to break it up with the potato masher.

Once mashed make sure the bag is secured around the top of the fermenter and then add the boiling sugar solution. Allow it to sit a few moments before adding the rest of the water which will bring the temperature down.

Add the mixed acid, tannin and yeast nutrient, mix well with a sanitised spoon and then cover and allow to cool completely.

Once cool add the Campden tablet and then cover with the lid and airlock and allow to sit for at least 12 hours. After 12 hours add the pectic enzyme and allow it to sit for another 12 hours. Take a hydrometer reading here to get your starting gravity for the wine.

After 24 hours add the yeast by sprinkling it onto the surface of the must without stirring, cover the fermenter with the lid and airlock and allow fermentation to start in around 24 – 72 hours.

Stir the kiwi wine daily with a sanitised spoon to prevent the fruit from drying on the surface while fermentation is in progress. After 7 days lift the bag out and allow it to drain without squeezing the bag. The kiwi can now be discarded.

Let the wine finish fermentation and start to settle for 2 or 3 days and then rack the wine into a demijohn/carboy. Insert a bung and airlock and let the wine finish fermentation and conditioning in the demijohn. As sediment builds up and the wine clears rack the wine into a clean demijohn/carboy and wait for the wine to clear completely.

The kiwi wine will benefit from ageing in the demijohn for a few months before being bottled. Once the wine is completely clear and has sat for 3 – 4 months you can proceed to bottle.

Once bottled set aside for as long as you can bear before trying, it is good to leave a least a few months before enjoying the wine and by that time you will notice great improvements in terms of flavour and body.

Anyone done 2x50L kegerator/keezer?

Title says it all - has anyone built a kegerator or keezer that will fit 2x 50L kegs?

I'm having trouble. I think a really tall upright fridge/freezer with stacked kegs will nearly work, but even the tallest ones seem about 200mm too short. Chest freezers seem to be a possibility, but most are too shallow and you also need a very very wide one I think.

Any advice appreciated, I've done some scouring on the web and I haven't found photos of any DIYs with 2x50L.

Did my first mash today in a couple of years. It did not go as planned. Started mashing 12odd yrs ago BTW.
Single infusion. 5.2kg grist. Little creatures bright ale clone.
Set strike at 67 for a 64deg mash. Usually spot-on. Dough in at 2.75:1, 76deg......wtf?? Seems the RTD, temp controller or both have crapped out. Bugger.
1hr mash, got down to 64 after 25mins.
Sparge at approx 85deg. Temp controller was all over the place and changing temp offset was not helping. Started using ext...

Torrified wheat in witbier? Issues with conversion at high %?

Anyone have any experience of using torrified wheat in witbiers as the main component?

I'm considering a grain bill of 45% pilsner, 45% torrified wheat, and 10% oats, but would that volume of torrified wheat cause issues with conversion/hitting target gravity? The recommendations for torrified wheat generally are for it to constitute up to 10% of the grist; I have used torrified wheat in a witbier in the past - I think it went ok, but it was many moons ago, and I didn't make any notes at...

As I recently realised that it's a handy idea to have at least one or two clear beer bottles in a batch of beer (well, duh!), I've been trying to buy clear glass bottles in the shops. But most supermarket beer I generally buy is in brown bottles. And looking at the minority of beers that are sold in clear bottles, the majority of them (Spitfire, Doom Bar, etc) have that type of bottle that doesn't have the big 'collar' under the lip. I *can* use these, but they have to be hammered on with a...

Keg disconnect o-rings

Does anyone know where I can get the flat o-rings of the correct size for keg disconnects, please? I mean the ones that are on the bit that unscrews from the top of the disconnect.

I bought some used kegs that came with a bunch of CMB disconnects which unfortunately, along with the kegs, are pretty horrid. I think the previous owner gave up brewing some years ago and left the equipment unwashed, so new seals all round.

Anyway, I have found that a 10mm ID 2mm thick o-ring does the job...

Has anyone had to take one of these apart? It seems a bit more complex than most regs. Scoured the internet yet despite this being a seemingly popular reg I cant find anything.

need to strip and clean it as although brand new it was creeping up pressure when pressure testing dry with empty keg, and not adjusting smoothly/accurately. Removing the front body shows some staining/ ingress of debris possibly from storage or manufacturing process, anyway i cant find a way to remove diaphragm...

I am! But then I do every year 🙂.

It's always tough to select what to grow but I've got Dorset Naga, Michael's Magic, Turtle Claw, Jamaican Jerk (all capsicum chinense), Tropical Orange (capsicum pubescens), and Madre Vieja (capsicum baccatum) in the propagator with reasonable germination so far.

I'll get my capsicum annuum sown at the start of March (they don't need so long a growing season) but haven't quite decided what I'll grow yet.

What are you growing / will you grow this year?

How long does it take you to bottle, and how can I speed it up

2 days ago I bottled 120 litres, from 6 batches, I didn't start until 10pm,did priming sugar, sanitised bottles, transferred into bottling bucket, capped with bench capper. Finished at 5am. I know I could of done some of it the next day but just wanted to get it done.

so how can I speed it up. One mistake was drinking whilst doing it! My first 2 batches were into 330ml bottles the rest in 500 ml and 650 ml bottles.

Probably with enough height not to have to put the beer line through daft bends, or at the very least the height of a 19L corny keg.

Cold Crashing a Lager Kit

I have acquired a fridge for brewing in the shed, as My 2nd effort at a Brewmaker Premium Pilsner Kit is almost at the bottling stage, I'm wondering if it would be worth cold crashing it.
My 1st attempt I used Liquid Malt Enhancer, which turned out quite hazy but tasty enough, this one I've used brewing sugar instead, I transferred into the bottling bucket today and stirred in a bentonite mixture as this too is very hazy, would cold crashing for a couple of days be worth it?

Nothing special a wholemeal bread with pumpkin seed and caraway seed, family get together tomorrow will be making some cheese and onion bread, maybe even some tomato and basil.

CML Beòir Yeast Overattenuating

This is the first time I've used Beòir yeast with a stated attenuation of 73-75%. Made a batch of Summer Lightning OG 1050 mashed at 66C and pitched Saturday. Came to rack into secondary this morning and the RG is 1004 giving an apparent attenuation of 92%! I'm aware of the limitations of my hydrometer, in fact water at 20C gives a reading of 1000 at the top of the meniscus rather than the bottom. I wonder if anyone else has had a similar experience with this yeast. Otherwise, it's amazing...

Covid the jab and the final stage.

SWMBO is a front line worker (carer) she has had the first jab and is now tested twice a week she also has the lateral flow test with the results showing 30 minutes after the test whenever she goes to work on the other days, there are no cases of Covid where she works and there hasn't been for quite a while.

I am hoping as a front line worker my turn will come soon my age will also help, its not often i am glad i am an old fart. :laugh8:

How many litres of home brew have you made 2021.

Kiwi Wine Recipe

Kiwi fruit is surprisingly inexpensive and they are available year-round so they make a great fruit wine when everything else is out of season. 

Kiwi wine is never going to be as popular as something like strawberry wine but in terms of the level of flavour both are around the same. Kiwi fruit also has the distinct advantage of being in supermarkets in the depths of winter. Kiwi fruit is grown in multiple regions and ripen well after being picked so they are available year-round in most places.

Kiwi wine makes a nice crisp white wine (with a tinge of green) and has an almost tropical flavour with melon and tart berries. You can make kiwi wine in the winter and it will be perfect for when the summer comes around to enjoy sitting outside in the sun.

Sourcing The Best Kiwi Fruit For Making Wine

Kiwi tends to be relatively cheap at most grocers and supermarkets. This is often because they need to be ripened at home. This is not a problem but does mean a bit of planning is required to make this wine.

We need to use the ripest kiwi fruit we can get, this means the stage just before they get mushy.

If you are buying hard, unripe kiwi to ripen at home then you can let them get to just the point when they are at their ripest and then peel them and freeze them. Freezing them will prevent them from spoiling and mean you can put the fruit aside as and when they are at their ripest.

Of course, you don't have to freeze them but it means you can manage a lot of kiwi fruit ripening at different rates and collect them ready to make the kiwi wine without any fruit spoiling.

Get Creative With Kiwi Wine

Kiwi fruit make a great partner to many other fruits and flavours. It is worth experimenting with some combinations to make a truly unique wine.

Kiwi and strawberries work really well together and the combination seems to boost the strawberry flavour as well as bringing a fruity quality.

You could also try pairing kiwi with some bolder flavours like ginger or tropical fruit like pineapple that makes a terrifically flavourful wine when most other fruit is out of season.

Kiwi also works well in floral wines, providing some crispness and acidity in what can otherwise be a floral wine that lacks body and bite.

Take the kiwi wine recipe below and try swapping some of the kiwis with other fruit or add some other flavours to create something really unique.

What You'll Need To Make Kiwi Wine – Makes 1 gallon / 4.5 litres

  Kiwi Wine Ingredients

In a large heavy-bottomed pan add the sugar with half of the water. Heat and stir to dissolve and bring to a simmer.

Whilst the sugar solution is heating, prepare the kiwi fruit. Peel and cut the kiwi into chunks and place the fruit in the straining bag tucked into the sanitised fermenting vessel. Mash the fruit roughly to break it up with the potato masher.

Once mashed make sure the bag is secured around the top of the fermenter and then add the boiling sugar solution. Allow it to sit a few moments before adding the rest of the water which will bring the temperature down.

Add the mixed acid, tannin and yeast nutrient, mix well with a sanitised spoon and then cover and allow to cool completely.

Once cool add the Campden tablet and then cover with the lid and airlock and allow to sit for at least 12 hours. After 12 hours add the pectic enzyme and allow it to sit for another 12 hours. Take a hydrometer reading here to get your starting gravity for the wine.

After 24 hours add the yeast by sprinkling it onto the surface of the must without stirring, cover the fermenter with the lid and airlock and allow fermentation to start in around 24 – 72 hours.

Stir the kiwi wine daily with a sanitised spoon to prevent the fruit from drying on the surface while fermentation is in progress. After 7 days lift the bag out and allow it to drain without squeezing the bag. The kiwi can now be discarded.

Let the wine finish fermentation and start to settle for 2 or 3 days and then rack the wine into a demijohn/carboy. Insert a bung and airlock and let the wine finish fermentation and conditioning in the demijohn. As sediment builds up and the wine clears rack the wine into a clean demijohn/carboy and wait for the wine to clear completely.

The kiwi wine will benefit from ageing in the demijohn for a few months before being bottled. Once the wine is completely clear and has sat for 3 – 4 months you can proceed to bottle.

Once bottled set aside for as long as you can bear before trying, it is good to leave a least a few months before enjoying the wine and by that time you will notice great improvements in terms of flavour and body.
