Brazier Consulting Services Ltd (BCS) has been ordered to pay the fine by the Information Commissioner's Office (ICO) after it received 316 complaints. So, In preparation for the game tonight, I decided to Smoke some beef chuck while I Brew. This huge slab of beef was supposed to feed about 8 of us, however my son had to isolate now due to a breakout at his school. This beef is going to last a fair amount of time lol. Chuck is currently smoking at 110°c and I guess it going to take till about 8pm tonight being that is 5kg worth of meat. In the meantime, I'm heating 36 liters of water ready to brew. Been a bit slack with posting up my brew day activity etc since I became more active on the forum. So here's a couple of posts on Ag brew kits from Get Er Brewed which have served me pretty well. As a new AG brewer I leaned towards these kits as it takes away a bit of stress regarding recipe creation enabling you to concentrate on your methods/processes whilst getting to know your equipment... I thought I'd add this here as a work in progress. After brewing for nearly 3 years I'm now in the process of getting started with corny kegs and I was struggling to find a "how to" on the web to do a closed transfer from a bucket without a tap at the bottom.
I'll state for the record that I'm learning/figuring out as I go - if there are any obvious better ways to do stuff, suitable gadgets or gizmos, or obvious problems I've not thought of then all input is welcome! Currently...

I'm looking to brew something strong, just for the sake of it, but want it to be drinkable. I was thinking along the lines of something Belgian and aiming for a deep and complex flavour with good maltiness. So this is what I've come up with - pale as the base, aromatic to get maltiness, biscuit to bring in a slightly different flavour profile. Hops are based on a few recipes I have found so I couldn't tell you what each addition is...
I've just put a Mangrove Jack's Irish Stout (following the kit recipe) into the garage for the last 7 days of conditioning, that was bottled 10 days ago. Obviously had to test it.
It's too fizzy for a stout.
Does anyone have any recommendations as to how I can calm it down. My ideas were either to shake it well before opening or alternatively undoing the lids now in a hope that it flattens this week.
Here's a picture and video of my first go at making wine. I have to thank @An Ankoù for the recipe for a rhubarb country wine; 1.6kgs of rhubarb with 1.6kgs of sugar left to osmosis for 2 days.It's happily fermenting away courtesy of a generous heaped teaspoonful of Youngs wine yeast and nutrient. Any of you wine experts give me guidance on how long it'll take to finish fermenting?
Not terribly original but I'm going to be starting my kegerator build this weekend and have a few questions that I've not found answers to in searches - well one really at the moment. I'm not an engineering expert and already realising my fridge isn't ideal as a kegerator - but I have it now and am going to make the best of it. Just opened a 500ml pet bottle of juicy ipa that was carbed with 2 brew2bottle carb drops, finished it's 2 weeks warm conditioning yesterday and put in the fridge overnight. It had a good head to start with but soon lost it also it does not have a strong hop taste it's still has a citrus taste, I take it this will all improve with age
Renowned for its red wines, one might assume that Chile's summer months revolve around pitchers of traditional, fruit-filled red sangria. But the South American country's mild Mediterranean climate also yields renowned examples of grape varieties like Sauvignon Blanc, and one of its most popular warm-weather beverages is based not in red wines, but white.
Melón con vino, or "melon with wine," consists of chilled white wine poured into a hollowed-out honeydew melon and mixed with powdered sugar. The drink is meant to be shared, with guests adding straws to the melon, which is passed around so everyone can sip. A common sight at celebrations, picnics, backyard barbecues or days at the beach, the drink originally hails from Spain, but it has become a staple in Chile and parts of central Argentina.
"Melón con vino is part of a larger tradition referred to as the cultura guachaca, which celebrates a certain kind of Chilean-ness which harkens back to the connection we have with the countryside and our rural culture," says Pilar Hernandez, creator of the Chilean cooking blog, En Mi Cocina Hoy, and co-author of the cookbook, The Chilean Kitchen. The book highlights melon con vino as a quintessential Chilean cocktail. "Chilean culture prioritizes shared experiences, and drinking this communal drink reaffirms the bonds you have with the people you share your melón con vino with."
Affectionately known as "Melvin," a mash-up of "melón" and "vino," the drink is so popular that Herman Villagrán Valero and José Morgado Páez, the creators of Chilean beverage culture blog Rayuela Corta, created a day in its honor. Melón con Vino Day falls on January 15, at the height of summer in the Southern Hemisphere.
"These types of celebrations rescue the roots of Chile," said Villagrán Valero to Chilean newspaper El Observador. "Melón con vino is in the memory of the Chilean."
Melvins are portable and shareable, which makes them the perfect companion for joyful reunions with friends and family, summer days and much-needed time outdoors.
"It is highly seasonal and inexpensive to prepare," says Eileen Smith, co-author of The Chilean Kitchen. She recommends honeydew that's very ripe and fragrant and, if enjoying outdoors, to bring along an ice-filled cooler to keep the ingredients cold.
