An Ancient Spirit Stars in this Revamped Classic Sazerac Posted: 22 May 2021 04:03 AM PDT Courtesy Olivia Duncan, beverage director, Galit, Chicago Though located in Chicago with a menu of Middle Eastern dishes, Galit restaurant has several ties to New Orleans. The strongest of note: The executive chef, Zachary Engel, is a NOLA transplant. "I thought it would be fun to have homage to that special place while tying in some Middle Eastern ingredients," says the Beverage Director Olivia Duncan of her reimagined version of a Sazerac, one of the city's most iconic cocktails. Her version of the drink adds the rich fruitiness of dates and swaps absinthe for arak, an anise-flavored spirit served historically throughout the Middle East. |
